I could not agree with you more Jameson. The centralization of our food supply and the decreasing diversity of our food over the past 90 years has created a fragile if not artificial sense of food security. We in the U.S. have the luxury of demanding fresh produce from the far reaches of the globe at any cost. This demand has only removed us from the seasonality of food production. In addition, it has also created the false sense that food is plentiful and readily available to everyone. Our next challenge as professionals is to start the discussion of codifying and protecting our agricultural lands and economy. As long as we allow urban/suburban sprawl to take precedent over food we will be on the brink of collapse.
